Masala chai ( spice tea) hailing from India is now mainstream staple. Someone somewhere right now is ordering a cup of this sweet steamy milk tea. Whether you get yours from a coffee shop or if your lucky enough from a chaiwala, we’re all drinking this concoction. Chai tea is all the rave, rightfully so. My first sip of chai tea, was from a teabag, I know a teabag. Delicious as it was, it can’t compare to a true cuppa of homemade masala chai. Simple to make yet so robust. A galore of spices mixed with a strong black tea and hot steamy milk, will leave your mouth buzzing in a Bollywood song and dance. I’m sharing my favorite recipe, it’s the real deal. You’re never gonna want to drink a cup of chai tea elsewhere, other then from the comfort of your home. After all there is no better place for this beverage to be indulged in. Now sip back and enjoy the feature presentation.
Masala chai
About 2 servings

1 cinnamon stick
4 cardamom pods
1 inch piece of ginger , left whole
5 cloves
6 black peppercorns
A pinch of salt
Sugar/substitute to your liking
2 bag of black tea
2 of whole milk
1 cups of water
Mix all the ingredients in small pot, except for the tea. Bring to a boil, then simmer for about 10-15 minutes on low heat, depending on how flavorsome you want it. Scald the milk, don’t burn it! Lastly add in the tea. Over a very low heat cook a further 2 – 4 minutes. Don’t over cook the tea; it will taste bitter. Strain the tea into a cup. Now you’re a chai aficionado.
