So this review is overdue, but as you know, life just gets in the way, of life, but with that said, this is my final review on this cookbook. It was an interesting read with tons of familiar and unfamiliar flavors, that when put together, create delicious meals. All the recipes are quite simple and really adaptable with substituting ingredients. The layout of the recipes are very easy to follow as well.
I tried quite a few recipes from this book, and was inspired to create my own recipes too. Lastly, the recipe I cooked was a North African Chickpea Soup, called Lablabi. It was super easy to prepare and cook. The paprika and the cumin really add depth of flavor to this dish. Instead of using red pepper flakes, I used two wiri wiri peppers, you could use any hot pepper or just use the pepper flakes to your preference. I also used two Roma tomatoes , that I stewed in the dish while cooking, then puréed before adding the chickpeas. You can check out my weekly vlog on YouTube to see how I prepared it.
Evi suggests eating it with Baladi, a recipe is provided for this in her cookbook. Baladi, is a type of flatbread, similar to a pita or chapati, but you can really use any flatbread to eat along side the soup. I made a fry bake, why; because that’s what my husband wanted to eat that day. We ate the chickpea soup, pepper sauce, avocado and the fry bake. It was such a filling dinner, and perfect to eat during lent, it’s both vegetarian and vegan. Dinner was a hit!
