
This months feature cookbook is “Flavors of Africa..” By Eva Aki. The flavors of this book have a familiarity to some dishes I grew up eating. Latin and Hispanic America cuisine has been very influenced by West Africa. While reading through all the recipes the food felt very much reminisces of my childhood.
The first recipe I sampled ( I followed the recipe exact ), was the Pilau ( Kenyan Spiced rice) along with the Kachumbari salad, which I served along with an African spice chicken, with store brought peri peri sauce. The meal was a hit with the family. My toddler enjoyed the flavors of the meal. Evi’s recipes are very easy to follow and if you can’t find an ingredient don’t let that put you off from purchasing the book. All recipes can be tailored to your pantry and preference. I believe all cookbooks are guidelines on how to cook something, you can use you own creativity to make it your own.
