
I recently finished reading The Zero-Waste Chef by Anne-Marie Bonneau, and I found it incredibly informative. The book shares practical steps for creating a greener, more sustainable lifestyle, along with helpful advice and recipes for reducing waste in the kitchen.
The first recipe I tried was the whole-wheat sourdough waffles. Although you need to start the batter the night before, the process was very simple—especially if you already have a sourdough starter on hand.
I followed the suggestion to use all whole-wheat flour, but I added one extra egg because my children enjoy having a little more protein with breakfast. The extra egg didn’t noticeably affect the taste, and the waffles turned out delicious.
We enjoyed ours with maple syrup, but they would also be lovely with honey, fresh fruit or any of your favorite toppings. This was an easy and satisfying first recipe, and I’m looking forward to trying more recipes from the book as we continue making our kitchen and lifestyle more sustainable.
